A wonderful cook and famous TV presenter dedicated part of her program to this most delicate pastry. To prepare the pie, the following products were required:

For baking:

  • premium wheat flour – 160 g;
  • sour cream (15 - 20% fat) - 100 g or 2 tbsp. spoons;
  • butter (72.5%) – 100 g;
  • baking powder – 1 teaspoon

For a gentle fill:

  • sour cream (15 - 20% fat) - 1 glass or 200 g;
  • chicken egg – 1 piece;
  • granulated sugar – 200 gr
  • premium wheat flour – 2 tbsp. spoons;
  • medium sour apples – 4 pcs.

Step by step recipe:

  1. To get an elastic dough, take the required amount of flour, sift it and mix with baking powder. Add sour cream and melted butter.
  2. Choose a fireproof baking pan with basket-shaped sides and coat with butter. Place the dough on it, roll it out with your hands and distribute it over the entire surface.
  3. Peel the apples and cut into thin slices. Place on the dough.
  4. To prepare a delicate filling, you need to beat the sugar and egg into a foam, then add flour and sour cream.
  5. Fill the contents of the mold with cream and place in the oven, heated to 180°C for 50 minutes.
  6. Leave the finished cake in the mold until it cools.

Tsvetaevsky pie in a slow cooker

The most delicate Tsvetaevsky-style pie in a slow cooker turns out to be just as appetizing as in the oven. For cooking you will need products:

For baking:

  • wheat flour premium quality – 1 glass or 200 g;
  • sour cream (15 - 20% fat) - 50 g;
  • butter (72.5%) – 120 g;
  • baking powder – 1 teaspoon

For a gentle fill:

  • sour cream (15 - 20% fat) - 1 glass or 200 g;
  • chicken egg – 1 piece;
  • granulated sugar – 1 glass or 200 g;
  • premium wheat flour – 2 tbsp. spoons;
  • vanilla sugar – 0.5 teaspoon;
  • medium sour apples – 4-5 pcs.

Step-by-step preparation:

  1. You need to get an elastic, soft dough. Mix the pre-sifted flour with baking powder, add sour cream, melted butter and knead. Roll the dough into a flat cake and refrigerate.
  2. By intensively beating eggs with sugar, sour cream and flour, we prepare the filling.
  3. Grease the multicooker bowl well with oil. Roll out the chilled dough into a layer and cover the bowl with sides.
  4. Place thin apple slices on the dough.
  5. Cover the contents of the mold with filling.
  6. In order for the finished pie to delight you and your guests with its appetizing appearance and excellent taste characteristics, it is better to consider the following:

  • Before mixing with other ingredients, flour must be thoroughly sifted so that it is enriched with oxygen. Then the baked goods turn out airy with a golden brown crust.
  • The baking dish for the pie should be in the form of a basket with not very high edges so that the filling can bake.
  • Cut apples into thin slices using special devices (potato peeler, chip cutter). Then the apples are soaked in the filling, and when baked they are laid out in layers and do not fall apart.
  • You can enrich the taste of the Tsvetaevsky pie by adding a few spices, such as vanillin, cinnamon, and lemon zest.
  • The pie takes longer to bake in a slow cooker than in the oven, about 90 minutes. Therefore, you need to control the baking process, adding additional time.

Taking into account all the subtleties of baking Tsvetaevsky apple pie, you will definitely get a magnificent aromatic dessert!

This cherry pie is a favorite in my family. I discovered it this summer, when I was pleased with the cherry harvest and needed to come up with options for using it, other than freezing, etc. As a result of the experiments, we got a simple and amazingly tasty pie with sour cream filling, which became our favorite!

Another cherry pie that I like and is very easy to make is this recipe.

Compound:

shape – Ø 25 cm

Dough:

  • 100 g butter
  • 100 ml sour cream
  • 50 g sugar
  • 200 g flour
  • 2/3 teaspoon baking powder
  • pinch of salt (optional)

Filling:

  • 600 g cherries (or 400-450 g frozen, pitted)
  • 150 ml sour cream
  • 100 g sugar
  • 1.5-2 tbsp. tablespoons potato starch (or 2 heaped tablespoons of premium wheat flour)
  • 1 packet vanilla sugar (optional)

Cherry pie - preparation:

  1. Leave the butter in a warm place until it becomes soft. Get the rest of the products we need.

  2. Wash the cherries and remove the pits (I do this with the back of a teaspoon).

  3. Make the dough. Add 100 ml of sour cream, 50 g of sugar to the soft butter, and maybe a pinch of salt to enhance the taste.

  4. Mix everything into a homogeneous mass. Add flour mixed with baking powder and knead into a soft dough.

  5. Grease a pie pan with a piece of butter and sprinkle with flour.

  6. Now you need to spread the dough over the bottom of the mold with your hands and form the sides.

  7. Mix all ingredients for filling except cherries. This will be the fill.

    Advice: If you prepare the filling with 1.5 tbsp. spoons of starch, after baking it will drain a little. Therefore, if you want to get a denser pie consistency (as in the photo), then you need to put 2 tbsp. spoons of starch. But we prefer the option when the filling is slightly liquid, it turns out like a cream. Lately I’ve been making it with flour (I add 2 tbsp), then it’s even more tender.

    You can also use half and half sour cream with cream, as in the recipe.

  8. Place the cherries on the dough, and it’s best to take them by hand, piece by piece, so that the juice remains in the plate (you can just drink it, we won’t need it).

  10. Place in a hot oven and bake for 20-25 minutes at 180-200 degrees. If you are using a glass pan, place it in a preheated oven but on a cool rack.

The finished cherry pie should be cut into pieces after it has cooled so that the filling can set better.

Before serving, you can sprinkle powdered sugar on top.

Delicious cherry pie

I also make this pie with homemade frozen cherries (before freezing, I take out the pits and drain the juice) without defrosting them. But if the cherries are juicy, then it is better to defrost them first and drain the juice (or you can roll them in starch).
