  • tomato paste – 3 tbsp. l.
  • onions – 1 pc.
  • garlic - 2 teeth.
  • bell pepper – 0.5 pcs.
  • salt and black pepper - to taste
  • sugar – 0.5 tsp.
  • hot pepper or chili sauce - to taste
  • vegetable oil – 2 tbsp. l.
  • water – approximately 150 ml

Preparation

    Leave the yeast puff pastry to defrost at room temperature, covering the top with film to prevent it from getting too dry. Meanwhile, we are preparing the pizza sauce. Heat vegetable oil in a frying pan and sauté the onion and garlic, diced, in it. As soon as the onion becomes soft, add chopped bell pepper (preferably red) to the frying pan. Fry for a couple more minutes, then add tomato paste, simmer for a minute and dilute with water to get a medium sauce consistency, add salt and pepper to taste. Simmer for 5-7 minutes, add a little sugar and hot pepper to balance the taste. Then we beat everything with an immersion blender - the result is a homogeneous tomato sauce for pizza, thick and tasty, much richer than ketchup.

    Prepare the filling. I cut ham and sausage into thin slices, chopped olives into circles, bell peppers into thin strips, tomatoes into circles. You can choose any fillings to your taste, the main thing is that the products are ready for use, because they will spend no more than 10 minutes in the oven. As for cheeses, mozzarella is ideal. If you don’t have it, then any hard cheese you have in the refrigerator is quite suitable for “lazy” pizza. I grated the “Russian” cheese and added silent parmesan crumbled by hand for flavor.

    In the meantime, the dough has already managed to defrost - for puff-yeast dough it will take at least 2 hours. I gathered it into a ball, sprinkled it with flour and kneaded it thoroughly with my hands. Then I divided it into two equal parts (you will get two large pizzas). Turned on the oven to preheat to 200 degrees.

    Roll out the dough using a rolling pin on a sheet of parchment - very thin, to a thickness of about 2 mm.

    I outlined the edge in a circle with a pizza cutter (you can use an ordinary knife) - I made a shallow cut along the entire inner perimeter, stepping back about 1 cm from the edge. And I pricked it with a fork over the entire area so that the puff pastry would not swell and bubble in the oven.

    I spread the sauce, trying not to go beyond the outlined edges.

    Transferred the workpiece along with the parchment to a baking sheet. And put it in the oven, preheated to 200 degrees, for 5 minutes. The dough is very thin, during this time it will be slightly baked, while the sauce will not allow the pizza to grow in the center, only the sides will rise.

    I laid the filling on top of the pizza - in an even layer, a little of everything, sprinkled with cheese (if you have mozzarella, then lay it out first and distribute the filling on top, it will turn out tastier).

    Returned the pan to the oven for another 10 minutes at the same temperature - the filling should just brown a little and the cheese should melt, but not dry out. Keep in mind that pizza is thin and flaky, it cooks much faster than with a classic yeast base, so don’t overcook it in the oven!

  • Frozen puff pastry – 1 package (400-500 g);
  • Olive or vegetable oil – 2-3 tablespoons;

How to cook

1. Prepare all pizza ingredients

  • Defrost the dough according to the instructions on the package.
  • Cut the ingredients for the pizza filling: tomatoes and sausage - into thin slices, champignons - thinly, in profile. Grate the cheese on a fine grater.
  • Dust the dough rolling table, rolling pin and baking sheet with flour. Set the oven to heat up high until 250-260 degrees C.
  • Roll out the dough until thin (but so as not to tear. But if there are holes, you can cover it with a piece of dough, it will stick well). I had 2 layers. The first one was enough for most of the pan. I cut a piece from the second rolled out layer so that it was enough to cover both the empty part of the baking sheet and the edge of the first layer by 1-2 cm (the layers of dough will overlap into a single sheet). And I cut the remains of the second layer into strips and laid a rim around the pizza (made sides).

2. Assemble the pizza

  • Grease the bottom of the dough with vegetable oil. Place tomato paste on top and spread with a spoon over the entire surface.
  • Place mugs of tomatoes, and then sausage, evenly across the entire bottom of the pizza. So that each portion then contains its own tomato and sausage. Sprinkle mushrooms on top (evenly over the entire surface). I also sprinkled in a pinch of dried basil for flavor.
  • Sprinkle the assembled pizza with grated cheese. And put it in the oven to bake until the cheese crust is browned (it took me 15 minutes, if not less). The temperature in someone else’s oven was at first generally maximum (I didn’t immediately find a thermometer). I placed the pan at about 260-270 degrees, and immediately reduced it, baking at 240-250. But very quickly.

Ready pizza on a baking sheet

Any homemade yeast dough that rolls out well will do. It will be required for 1 baking sheet based on 250 g of flour (that is, a little). Yesterday I made dough from 500 g of flour, so I baked both a pizza and a pie with apple and orange filling. I will write the recipe in terms of only 1 pizza.

Ingredients for 1 pizza (the size of a baking sheet)

  • Yeast - based on 250 g of flour (I used dry, quick-acting yeast, based on 1 packet per 500 g of flour = 25 g of live yeast. Look on the package to see how much flour your yeast is for);
  • Sugar – 0.5 tablespoon;
  • Warm water – 1/4 cup;
  • Salt – 0.5 teaspoon;
  • Butter - a small piece (or vegetable oil - 1-2 tablespoons);
  • Egg – 1 piece;
  • Flour - 250 g. This is a little more than 1.5 cups. (Watch not so much by weight, but by whether the dough sticks to your hands. If it sticks, add more). + flour will be needed for rolling out and sprinkling the baking sheet.

Dissolve the yeast in warm water with sugar (the water should not be hot, just pleasantly warm). After about 5 minutes, the yeast will come to life and foam will begin to form. Then combine all the dough components in a saucepan. Add flour if necessary. If suddenly the dough turns out to be too steep, add a little water. Knead. Cover with a lid and place in a warm place for 1.5 hours until rising.

Roll out the finished dough thinly according to the shape of the baking sheet (sprinkle the rolling pin and the surface of the table with flour, and if the dough sticks, then that too). Transfer the dough to a baking sheet (dusted with flour), grease the dough (bottom of the pizza) with oil and tomato paste, lay out the filling, sprinkle with cheese. And bake in a very hot (preheated to 250-260 degrees C) oven for 10-15 minutes. As soon as there is a delicious smell of baking and the edges are slightly browned, it’s ready.

The meat part of the filling can consist of brisket/bacon, ham, even boiled sausage (but preferably in fatty sausage). You can also put chicken fillet (boiled, fried, stewed), but if it is breast fillet, then it is a little dry, in my opinion. Something juicier tastes better in pizza.

You don't have to put the meat in. It’s also tasty and satisfying with mushrooms. For those who are interested in the second one.

What instead of mushrooms

You can simply not put mushrooms. Or add bell peppers, gherkins or olives, olive rings, a handful of corn, peas. Just see how all the products fit together.

If you like it spicy, then chili pepper or any bitter fruit pepper will be good (in very moderate quantities, from a small pepper - a third of a pod or even less).

Beans in tomato (instead of tomato paste, coat the bottom with canned tomato) + sweet peppers, tomatoes - also very tasty. And if you add meat with fat or lard to this, it will be absolutely wonderful.

If there are no tomatoes

Pork with fat (bacon) and pineapple pieces will be deliciously combined. Or pork with apples. Champignons, meat (chicken or pork) and apples are also a good combination. But apples must be sour.

If there is no meat and mushrooms

Canned fish in oil (such as sardines, tuna, pink salmon, etc.) is suitable.

I had homemade dough for 2 pizzas, from the second part I baked a pie with filling from what was on hand. I grated 2 large apples and added half a peeled orange (each slice crosswise into 4 parts). I admit, I grated some more zest. The smell was amazing! I brought a piece of pie home and ate it. So the empty plastic bag in which this piece lay was fragrant even before the morning!

But, I warn you, the zest here is not felt like in a biscuit. After standing, it begins to taste a little bitter (from both lemon and orange. Not to mention tangerines and grapefruits, their zest is generally not good, it is always bitter). If you don’t like this, then don’t add the zest; orange pulp is enough.

Apples (without core and peel) - grated on a coarse grater. Mixed with oranges. All without sugar, just sweet and sour filling. And the dough contains little sugar, by the way. And it turned out very tasty, juicy.

In short, I rolled out the dough and placed a mound of filling in the center. Over the mound, I gathered the edges of the dough into a knot and pinched it. And she flattened it with her palm into a flat cake.

Bake at the same high temperature of 250-260 C for 15-20 minutes (until browning). Do not grease the baking sheet, just sprinkle with flour.

The finished pie can be greased with a piece of butter or a small amount of vegetable oil, it will become brighter, more ruddy and shiny.

    Well, now I’ll show you how to cook pizza quickly and tasty in the oven. Occasionally, when, due to lack of time, there is no time to tinker with the dough, then I buy ready-made dough from the store. So I take a piece out of the freezer and leave it to defrost. This process is very fast. And then I sprinkle a silicone mat or any other work surface with flour, lay out the already defrosted dough and roll it out a little. Then I transfer it to a baking sheet with parchment.


    Then I spread ketchup on it. I didn’t grease a small part because the child asked for a piece without it. Add the amount of ketchup according to your taste, as you like, but I used about 3 tbsp.



    You can also add other filling ingredients as you like. Then I top it with a generous layer of grated hard cheese. The more it is, the tastier it is. You can grate it either on a fine or coarse grater.
