Recipes for chokeberry preparations for the winter. Chokeberry wine at home

Aronia berries can remain on the tree for a long time if they are not eaten by birds. They can be used fresh, or you can make various preparations from them. Our next article will tell you how chokeberries are prepared for the winter.

Chokeberry berry harvest time

To make the preparations tasty and meet your expectations, you need to know when to pick the berries. The ideal time for removal is the beginning of autumn - September-October. Then the crop reaches its full maturity, it can be preserved for the long winter months and used as a preventive measure for various diseases.

Important! Berries are collected by cutting off clusters of fruit with scissors and placing them in shallow containers. By hanging them in a cool place, protected from sunlight, you can have fresh fruits on hand all winter. This could be a cellar, attic, closet on the balcony. It is important that the air temperature during storage does not rise above 5°C.

If you want to get a berry with the maximum concentration of nutrients, pick it after the first frost. It is then that it acquires its best taste. Now let's figure out what can be made from chokeberry.

Recipes for chokeberry jam

The first thought that arises when you want to prepare chokeberry is jam. There are many options for making jam from this berry, but the preparatory stages of their preparation are approximately the same.

Did you know? People often call chokeberry chokeberry, and its scientific name is chokeberry, more precisely, chokeberry Michurin. It has an incredibly high content of vitamin C, almost as much as lemon. And there is twice as much vitamin P as in black currants. It also contains a huge amount of iodine - four times more than gooseberries and raspberries.

When the time comes to make chokeberry preparations for the winter, it is important to properly heat treat the berries. It turns out that the fruits are dry, so before boiling them, it is recommended to soften them a little. This is done by sequentially lowering them for 3 to 5 minutes, either in boiling water or in cold water. After the procedure, the fruits are poured into a colander, allowed to drain, and only after that they begin to prepare jam or other preparations.

It is not beneficial for preparing the mixture, because hard rowan berries take a long time to cook. First, add half a kilo of sugar to half a liter of water and prepare syrup. They pour it over berries prepared according to the principle mentioned above and put it on the fire. When the mass boils, keep it on the fire for about five minutes, stirring constantly, and then remove and leave for about 8 hours or a little more. This time is necessary for the berries to be saturated with syrup. After this, the rest of the sugar is added to the mixture and the container is again put on fire. Stirring, cook until the syrup thickens.

The jam is placed in jars and covered with lids, usually metal ones. Can also be covered with polyethylene. Some housewives even cover the jars with film and fasten them with twine soaked in water. When it dries, it contracts, creating a tight seal.

Chokeberry jam can be made without sugar. It is especially useful in this form for people suffering from diabetes. To prepare it, take a large container, place a rag on its bottom, and place jars filled with prepared berries on top. Water is poured into a container so that it reaches the hangers of the cans, and brought to a boil over low heat. As the berries settle in the jars, you need to add them little by little. The cooking process takes about 40 minutes. When the jam in them is ready, take out the jars one by one and roll them up.

In this case, take half chokeberries and half apples. Apples also need to be blanched for at least three minutes in boiling water. From the water remaining after this procedure, syrup for jam is prepared: put the water on the fire, add sugar and, when it is completely dissolved, remove from the heat. Add berries and apples to it and leave them for four hours. Then they put it on the fire, cook after boiling for about five minutes and let it brew again for three hours. This is done several times until the berry softens. Only after this can you put the mixture into jars and roll up the lids.

Chokeberry can be prepared not only on its own; recipes often involve adding other fruits and even nuts to the jam. To prepare such an unusual jam, you need to take a kilogram of chokeberry, 300 g of Antonovka apples, 300 g of walnuts, lemon and one and a half kilograms of sugar.

Prepared berries are poured with boiling water overnight. In the morning, take this infusion and add sugar to prepare syrup. Place berries, crushed nuts, chopped apples into a boiling solution and cook in three steps for 10 minutes. Prepare the lemon in advance: scald, peel, cut and remove the seeds. During the last cooking of the mixture, this is also added. When the jam is ready, cover the container with a cotton cloth, close it with a lid of the same diameter and leave until the berries soften. Then the jam is put into jars and rolled up.

Chokeberry jam

Chokeberry is prepared in different ways; recipes for the winter also involve making jam or, as we used to call it, marmalade. For this you will need about half a kilo of sugar and a kilo of berries. The fruits are prepared for cooking, then poured into a container and covered with sugar. They must be left until they release their juice. This usually takes 3 – 5 hours. After this, place the container on the stove, bring the contents to a boil, reduce the heat and cook for exactly an hour, stirring constantly.

When the mixture has cooled, rub it through a sieve or grind the berries with a blender. The future jam is put back on the fire and boiled until it thickens. Place hot into sterile jars and seal. Used as a dessert or base for sauces.

Did you know? If you have a freezer or bulk freezer, the berries can be frozen. To do this, you need to wash them, dry them, separate them from the stalks, divide them into portions and put them in the freezer.

Recipes for chokeberry compotes

In winter, chokeberry compotes can be prepared from frozen berries, or you can use canned ones from the fall. There are several interesting recipes for making chokeberry compote for the winter.

The easiest recipe for making compote is to pour hot syrup over the berries once. Berries prepared for canning are scattered into jars to a third of their volume. Then prepare a syrup from water and sugar in a 2:1 ratio: sugar is diluted in water, brought to a boil and boiled for about 5 minutes. The syrup is poured hot into jars with berries, and immediately rolled up with metal lids. The jars are turned over, wrapped and allowed to cool. After which the workpieces can be lowered into the cellar.

You can prepare compote in another way. Pour boiling water over the berries poured into the jars, and then pour the entire contents into the container along with the berries. The mixture is boiled until the berries burst, after which sugar is added and boiled for 10 minutes. Only then the compote is poured into jars and sealed. However, it is believed that with this method of preparation many useful substances are lost.

A compote of chokeberry and sea buckthorn would be great for the winter. To do this, take the berries in a 1:2 ratio, wash, peel and lay them out on a clean towel. While the berries are drying, steam the jars and cook the syrup: add 130 g of sugar to 3 liters of water. The berries are placed in jars so that they are one-third full, and then filled with syrup to the neck. The filled jars are placed in a container of water, which is brought to a boil and kept in this state for half an hour, if the jars are three-liter - 20 minutes, if the jars are two-liter - 10 minutes. Then they roll it up, turn it over, wrap it up and keep it like that for several days.

Important! In winter, compote can also be prepared from dried berries. To do this, they can be washed, separated from the stalks, laid out in one layer on paper and dried, stirring occasionally. The room where they are dried must be ventilated with a temperature not exceeding 50°C. When using ovens, the beneficial properties of the berries are lost.

Compote of chokeberry with citrus fruits

Assorted compote turns out great, especially if citrus fruits are added to it. The most popular is chokeberry compote with lemon, the recipe for which is given below. The basic cooking process is the same as described above, only lemon slices are added to the jars along with the berries. You can add an orange or two citrus fruits together. Then the jars are poured with boiling water, allowed to brew for five minutes, the water is poured into a separate pan, in which syrup is prepared at the rate of two glasses of sugar per jar. The syrup brought to a boil is poured into jars with berries and citrus fruits and the lids are rolled up. The jars are turned over, left overnight, and in the morning they are lowered into the cellar.

Chokeberry syrup is considered healthy and tasty. To do this, take pre-prepared but already dried chokeberry berries and pour them into three-liter jars up to the shoulders. Add three tablespoons of citric acid (30 g) and pour boiling water up to the neck. Cover the tops of the jars with gauze or a saucer and leave for a couple of days.

After this period, the water is poured through a strainer into a saucepan, sugar is added at the rate of one and a half kilograms per three liters of water and put on fire. The syrup must be constantly stirred and heated until the sugar melts; it is not necessary to bring to a boil. When the sugar dissolves, remove from heat and let cool. The finished syrup is poured into sterile containers, covered with lids and sent to a dark, dry place. It doesn't have to be cold. Even in a warm room, the syrup can be stored for several years.

Chokeberry juice

Aronia juice will also be useful. To prepare it, you will need a liter of fresh chokeberry juice, a liter of apple juice and about 50 g of sugar. The juices of berries and apples are mixed, heated, sugar is added, put on low heat and brought to a boil. Then they pour it into jars and roll up the lids. The jars must first be sterilized for less than 15 minutes.

Lovers of strong drinks prepare wine from chokeberry, which pleasantly pleases not only with taste, but also with color. In addition, 200 g of this drink per day will fill the body with a huge amount of nutrients and vitamins, normalize blood pressure, improve intestinal function, sleep, and vision. To prepare wine, take a 10-liter bottle and pour 2 kg of berries into it, which were previously crushed in a meat grinder. One and a half kilograms of sugar are poured in there. The more berries there are, the richer the drink will be. Sometimes a handful of raisins or gray rice is thrown in for taste; they also contribute to a more active formation of wine yeast. A medical rubber glove is pulled over the bottle, the middle finger is pierced, and it is placed in a warm, dark place. Shake every day without removing gloves.

After three days, two liters of cold boiled water and a glass of sugar are added to the bottle. Then it is covered again with a glove and returned to its place, shaking it every day. The procedure is repeated two more times every 10 days. The wine will be ready in 33 days.

If rice or raisins were not added to the mixture, then the first procedure should be done after 10 days, when yeast is formed. This wine takes 40 days to prepare. You can drain it when the glove is down. If it is inflated, you need to wait a few more days.

The drained wine should be allowed to brew for a couple of days. Then it is poured into a container so that no sediment gets in. The manipulations are repeated every 2–3 days until a completely clear wine is formed. You can store it in a jar or bottle with a lid.

Homemade chokeberry preparations can be stronger. To prepare a berry liqueur, the washed fruits are poured into a three-liter jar up to the shoulders, half a kilo of sugar is added and poured with vodka. There should be 2 cm of free space from the edge of the neck. As a rule, a three-liter jar requires one and a half kilograms of berries and a little more than a liter of vodka. The jar is covered with parchment paper folded in three layers or a nylon lid and lowered into the cellar or placed in the refrigerator. After two months it can be taken out and bottled. The tincture is also stored in a cool place.

Aronia vinegar

U Chokeberry vinegar is rich in beneficial substances and gives dishes a special aroma, taste and color. To prepare it, you need to wash the berries, chop them and add water in a 1:1 ratio. Then per liter of mixture add 20 g of dried black bread, 50 g of sugar, 10 g of dry yeast. The liquid is left to ferment at room temperature for 10 days. After this period, 50 g of sugar is added to it. After a couple of months, the vinegar is ready. It is bottled, corked and stored in a dark place.

The fruits of chokeberries make delicious marmalade. Take ripe berries, preferably those that have already been frozen. Wash them, remove them from the stalks and blanch them in salted water. Place in a saucepan, add a little water and boil the berries. After this, they need to be slightly mashed, rubbed through a sieve and the puree put back on the fire, adding sugar. Stirring continuously, cook the mixture until it thickens. For 2 kg of berries you will need about a kilogram of sugar.

While the mixture is cooling, take a baking sheet, cover it with parchment and sprinkle with sugar. Place the cooled mixture on it and place in a hot oven. The marmalade is kept in it until a crust forms. When you take it out, sprinkle with powdered sugar and vanilla, cut into pieces and store in a closed container.

Chokeberry jelly

Aronia berry jelly also tastes great. For a kilogram of fruit you will need half a liter of water and 700 g of sugar. Pour the sorted, washed and blanched berries into a container, add hot water and boil until they soften. Then remove from heat, let cool, and squeeze the mixture through cheesecloth. Add sugar to the resulting liquid and put it on the fire again, but this time slowly. Bring to a boil, keep on fire for 15 minutes. While the liquid has not cooled, it is poured into jars that have been sterilized in advance. They are covered with lids or parchment, tightly tying the neck.

Chokeberry is a source of vitamins and nutrients

If you regularly eat chokeberry, you will notice that you are looking younger right before your eyes. This applies not only to appearance, but also to the general condition of the body. This wonderful berry is an excellent preventative against inflammation, bacterial infections, diabetes, nervousness and even cancer! And recent studies have proven that the fruits of chokeberry will significantly enhance the effect of treating all these diseases.

For those who want to lose weight, especially after winter, chokeberry will be a real discovery. It has a general balancing effect on the body, speeds up metabolism and will provide you with all the necessary set of vitamins during this period of the year. This plant has a very interesting feature: it prevents the accumulation of fat, in particular at the abdominal level.

What's the best way to prepare for the winter?

In summer and early autumn, when chokeberry ripens, its fruits can be eaten immediately, picked from the bush and washed in running water. Fresh berries will last no more than a week in the refrigerator, so you need to decide how you will process them to stock them for the winter.

Note! For any preparations, choose beautiful, dense berries with an even color and a clean, shiny surface. It is better to throw away wet fruits covered with stains immediately: most likely, they are spoiled and will spread mold.

From chokeberry you can prepare for the winter:

In this article we will tell you about making chokeberry jam. In winter, you can add it to tea, compote, and also to pies and muffins as a filling.

Main components of chokeberry jam

The standard set of products for classic jam is as follows:

  • chokeberry berries;
  • granulated sugar;
  • water.

Since chokeberry fruits have a peculiar bitter, astringent taste, you will need a lot of sugar - about 1.5 kg per 1 kg of berries.

Choose strong, dense and clean fruits for jam.

Agree, it would be boring to make jam only from chokeberries. After all, we love experimenting with flavors! So chokeberry goes well in winter preparations with many berries, fruits, spices and other products. You can combine it in jam with:

  • apples;
  • oranges and lemons;
  • nuts;
  • plums;
  • zucchini;
  • mint, lemon balm and other herbs.

We will present to your attention several different recipes for making such jam. They will become a kind of “starting point” for your further experiments, because chokeberry is so good in tandem with other products that it would be a sin not to try as many options as possible! In addition to taste and aroma, such combinations acquire additional benefits for the body.

Recipes

We'll start with the classic preparation. This jam has a beneficial effect on the condition of the whole body and improves immunity.

Classic version

Difficulty level: easy. Cooking time: 40 min.

Classic chokeberry jam

Ingredients:

  • 1 kg of chokeberry;
  • 1.3 kg sugar;
  • 1 glass of water.

Cooking process:

  1. Take a pan of suitable volume, pour water into it and add sugar. Stir until completely dissolved. To do this, you can warm up the water a little.
  2. Wash the berries and remove the stems. Place in a saucepan and place in boiling water for 5-7 minutes to blanch.
  3. Boil the syrup and add blanched berries to it. Cook for 10–15 minutes over medium heat. After this, remove the pan from the heat and leave the mixture to cool for 3-4 hours to room temperature.
  4. Place the pan with the future jam on the fire again, bring to a boil and simmer for 15 minutes.
  5. Immediately distribute the jam into the jars, seal with lids and leave to cool at room temperature. Jars must be cleanly washed and sterilized.

This jam is stored equally well both in the room and in a dark, cold room, such as a basement.

Delicious combination: chokeberry, lemon, apples and nuts

There are so many vitamins in this jam that doctors recommend enjoying it after long-term serious illnesses and operations.

Difficulty: medium. Cooking time: about 70 minutes.

Apples are an excellent addition to chokeberry jam.

Ingredients:

  • chokeberry berries - 1 kg;
  • sugar - 1.5 kg;
  • lemon - 1 pc;
  • apples (preferably Antonovka or other sour varieties) – 300 g;
  • walnut kernels - 300 g.

Cooking process:

  1. Pour boiling water over peeled and washed chokeberry berries and leave overnight.
  2. In the morning, take 1 glass of the resulting infusion, mix it with 1.5 kg of sugar and boil until completely dissolved to make a syrup. While it is boiling, add berries, apple slices and pre-crushed nut kernels. Boil for 10 minutes and let cool slightly for 1-2 hours. After this, repeat the cooking process 2 more times for 10 minutes.
  3. When you cook the mixture for the third time, add lemon to it. Pre-scald it, peel it, cut it arbitrarily and be sure to remove the seeds - because of them the jam will be bitter.
  4. Cover the pan with the prepared jam with a cotton cloth and cover it with another container of the same diameter. This way you will create an air cushion that will significantly soften the rowan fruits.
  5. Leave this structure overnight, and in the morning, spread the infused jam into sterilized jars and close the lids. Store the preparation in a cool place (unless, of course, you eat all the jam in a week!).

Quick jam - five minutes

Preparing this jam will take you the least amount of time.

Difficulty level: easy. Cooking time: about 40 minutes.

Preparing five-minute jam will not take you much time

Ingredients:

  • 2 kg of chokeberry berries;
  • 1 kg sugar.

For this jam, it is easier to use not the exact amount of products in grams, but the proportions: for 2 parts of fruit, 1 part of granulated sugar.

  1. Blanch the washed berries in boiling water for 5 minutes, then grind in a meat grinder or blender. Mix thoroughly with sugar and place on low heat. Heat until the sugar is completely dissolved.
  2. Turn up the heat a little more, wait until it boils and cook for 5 minutes.
  3. Distribute the jam into clean, sterilized jars. Place them in a large saucepan, pour water up to the shoulders of the jars. After the water boils, sterilize the jam for 20 minutes, then roll up the lids.

If you want, add a little citric acid or baked mashed apples to the five-minute jam.

After the jam has cooled at room temperature, put it in the basement for storage. A refrigerator will also work - the main thing is that it is dark, dry and cool.

Note! You can easily determine the readiness of chokeberry jam by the state of the berries: as soon as they sink to the bottom, you can remove them from the heat.

Dry Kiev jam from rowan and plum

This recipe is very unusual. At first glance, it will seem complicated to you and will require a lot of time and attention. But the result will incredibly please everyone!

Difficulty level: difficult. Cooking time: 60 minutes.

A very unusual and original recipe for chokeberry jam

Ingredients:

  • 250 g chokeberry;
  • 250 g red rowan;
  • 500 g plums;
  • 400 g sugar (of which 300 g for syrup, 100 g for sprinkling);
  • 300 ml water;
  • 1 g cloves.

Cooking process:

  1. Wash the rowan berries and separate them into small clusters (several berries per branch). Place in the freezer for 30 minutes so that the bitterness leaves the rowan and only the tartness remains.
  2. Divide the plums into halves and remove the pits. It is better to take fruits of the “Hungarian” variety, not overripe and hard.

    Peel the plums and halve them

  3. Place the pan on the fire and prepare the sugar syrup. Add fruits to it, boil for 5 minutes. Don't forget to skim off the foam during cooking. At this stage you can add cloves.

    Boil plums and berries in syrup for 5 minutes

  4. Remove the jam from the heat and let it sit for 2-3 hours. Cook in two more batches. You can cook plums and rowan separately from each other, but this is optional.
  5. You can easily determine the readiness of the jam by eye. The plum pulp, retaining its shape, will become honey-like, and the red rowan will take on an amber color.
  6. Remove the fruits from the pan with a slotted spoon and place them in a sieve. Wait for the syrup to drain.

    Let the berries and plums drain

  7. Sprinkle plums and rowan berries with fine sugar (you can use powdered sugar). Place on a wire rack and place in the oven for 2.5 hours at a temperature of up to 100 degrees. Make sure that the fruits do not dry out.

    Dry the fruits on a wire rack in the oven until ready.

This dry jam is somewhat reminiscent of candied fruits. It can be stored for a long time even at room temperature and any humidity in a tightly sealed container.

Recipe with zucchini

Yes, you understood correctly: we will combine berries with this wonderful vegetable. You are probably familiar with recipes for many unusual zucchini dishes. Why not make delicious jam from it and chokeberry?

  2. Wash the zucchini, cut off the peel, remove the seeds. Cut into small cubes.

    Peel the zucchini and cut into cubes

  3. Place the rowan berries and zucchini in a bowl, add sugar and mix gently. Leave for a couple of hours. During this time, the products will release juice. Stir again and leave for another 3 hours until the mixture is well soaked.

    Mix the products with sugar in a bowl and leave for a while

  4. Place the bowl over low heat to simmer, add the cinnamon sticks and squeeze out the lemon juice (be careful not to let the seeds get into the jam). Wait for it to boil and cook, stirring constantly, for 30 minutes. This jam produces almost no foam.

    Cook for 30 minutes, adding cinnamon and lemon juice

  5. Leave the jam overnight until completely cooled. Boil it again for 30 minutes and, while still hot, place it in sterilized jars. Roll up the lids and let cool in the room. There are no special storage conditions: you can leave it in the house, put it in the refrigerator or put it in the basement.

    Place the finished jam into jars before it cools down.

The berries in this jam do not lose their shape, and the pieces of zucchini resemble candied fruits.

Sugar free jam

In addition to all the positive qualities, chokeberry is very useful for people with diabetes. They can also treat themselves to chokeberry jam, but without the sugar content.

Difficulty: medium. Cooking time: about 60 minutes.

For such jam you do not need to follow the proportions of the products. The recipe is a little more complicated than jam with sugar, but there are no particular difficulties in its execution.

First of all, you need to prepare a large pan, wide and with low walls. Place a rag on its bottom.

Treat the chokeberry berries with boiling water and place them in half-liter jars. Pour water into a saucepan and bring to a boil. Place the jars of berries in boiling water so that the water reaches their shoulders, but does not pour inside. Reduce the heat under the pan to just maintain a simmer.

This jam is prepared by sterilizing jars filled with berries.

While the water is boiling, the berries in the jars will settle slightly; you will have to add them to fill the empty space.

The boiling process should last no more than 40 minutes. After this, remove the jars from the pan, roll up the lids and let cool at room temperature. Store in a cool, dry place.

Juices and compotes

NATURAL JUICE. The berries are washed in brushes, separated from the stalks, and chopped in a meat grinder. Transfer to an enamel pan, adding half a glass of water for each kilogram of mass, heat in a water bath at 60°C for ten minutes. This promotes better juice yield and the transfer of biologically active substances into the juice. The juice is squeezed out with a juicer, heated to 80-85°C and pasteurized in small jars at a temperature of 85°C (half-liter jars - 10 minutes, liter jars - 12-15 minutes). The juice can be preserved using the hot pour method: boil for three minutes, pour into sterilized glass jars of 2-3 liters, roll up and place the lid down until completely cooled.

The cake remaining after squeezing the juice contains many more useful substances. It is poured with warm boiled water, left, stirring occasionally, for three to four hours and squeezed out again. You can also use the cake for jelly, adding apples or lemon. To improve the taste of canned juice, you can add sugar (50 g per liter of juice) or apple juice (0.5 liter of apple juice per liter of chokeberry juice), or sea buckthorn juice.

JAM SOUTH NIGHT.Blanch the prepared berries in boiling water for two minutes, transfer to boiling sugar syrup, hold over low heat for five to seven minutes, remove from heat and stand for eight hours, then cook until tender. In the finished jam, the fruits do not float to the top, but are evenly distributed in the syrup. A drop of syrup poured onto a saucer retains its shape without spreading. At the end of cooking, add citric acid.

  • small lemon;
  • 2-3 large apples;

Boil for another 15 minutes, turn off the stove and let the compote cool without removing it from the burner. Apples and chokeberry together will wonderfully complement each other: excess astringency goes away, the sourness becomes less pronounced, but the incomparable aroma and taste of rowan remains. And due to short heat treatment, the compote will retain most of the vitamins.

Chokeberry tinctures

The big advantage of chokeberries is that they tolerate freezing well and can patiently wait in the freezer or even on the balcony all winter. However, there is one subtlety. If you are preparing a drink from frozen chokeberry, try to drink it within 2 days, otherwise compotes and fruit drinks will lose most of their vitamins. However, rowan delicacies are unlikely to stagnate in your kitchen.

But this rule does not apply to preservatives, much less to liqueurs and tinctures. Sweet, “spiritual”, with a unique subtle bitterness, they will be stored indefinitely, saving you from colds, viruses and simply decorating the table during the holidays.

You will need:

  • chokeberry;
  • vodka.

Fill the bottle in which you are going to make the tincture with strong, never crushed berries, having sorted them out first. Fill the rowan with vodka, close the bottle tightly and put it in a cool, dark place for a month. Keep in mind that during the first week the berries will absorb the alcohol and the amount in the bottle may decrease slightly. In this case, be sure to add vodka to the top. After a month, strain the infusion, squeeze out the berries and pour the drink into a suitable container. All you have to do is wait for a reason to surprise your guests with chokeberry liqueur.

If you were unable to stock up on fresh berries on time, this is not a problem. They can easily be replaced by dried fruits, and such a substitution will not affect the quality of the final product. So, to prepare a tincture of dried chokeberry berries with vodka, wash, dry and mince the prepared dry chokeberry fruits. Fill the bottle 2/3 full with crushed berries, add vodka and leave to steep for 4-5 months. The tincture will be strong and aromatic.

You can prepare a more noble drink by spending a little more time. You will need:

  • 1 kg of chokeberry berries;
  • 1 kg sugar;
  • 500 ml vodka;
  • a handful of cherry and currant leaves.

Wash and mix the berries and leaves. Fill with water, bring to a boil and leave on the fire for a quarter of an hour. Rub the cooled broth through cheesecloth to squeeze the juice out of the berries. Return the pan to the heat again, adding sugar, boil the liquid and continue cooking for another 20-25 minutes, remembering to stir the thickening syrup. Remove the pan from the heat and cool. Mix the syrup with vodka, pour into a bottle and place in a cool, dark place to infuse. In a month, the sweet chokeberry liqueur will be ready for consumption.
